It is two recipes for Easter. Two recipes that are straight forward, excellent and perfect for this weird old celebration of the death and ‘re-birth’ of Jesus. A four day weekend never goes astray.

These are two of my favourite Easter recipes. The first is a hot cross bun recipe. A recipe that will hopefully yield you a result better than anything you can buy. I go hard on the spice compared to a lot of recipes you will find. I like it. It makes it worthwhile. It makes it a hot cross bun.

There is one thing to remember when making the buns. Use bread flour, not cake flour. It’s vital. Absolutely. There is no point in doing the work for your hot cross buns to taste like wimpy, cakey, spiced, bullshit finger buns. Bread flour gives them grit and texture and life. Do not ignore this warning.

The second recipe is an old favourite. Greek in it’s inspiration and entirely appropriate for this time of year. Strangely familiar, it’s a wonder. If you haven’t made such plans yet, this is a good one for Sunday or for today if you aren’t fussed by fish.
